For the Crust:
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
2 medium apples, peeled and diced
1/2 cup brown sugar
1/4 cup powdered sugar for glaze
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
In a medium bowl, whisk together flour, baking powder, salt, and 1 teaspoon cinnamon.
In a large bowl, cream butter and granulated sugar until light. Beat in eggs one at a time, then vanilla. Alternately add flour mixture and milk, mixing until just combined.
Fold in diced apples. Spread batter into prepared pan. Mix brown sugar and remaining cinnamon; sprinkle over batter.
Bake for 30-35 minutes until a toothpick comes out clean. Cool slightly, then drizzle with powdered sugar mixed with a tablespoon of milk.
