Ingredients

Scale
  • 1 1/2 pounds ground beef
  • 1/4 cup chopped onion
  • 2/3 cup plain bread crumbs
  • 1/3 cup milk
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon dry ranch seasoning (optional)
  • 2 pounds potatoes
  • 1/3 cup butter
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon dry ranch seasoning (optional)
  • 4 slices bacon, crumbled
  • 1 cup shredded cheddar cheese

Instructions

  1. In a bowl, combine ground beef, chopped onion, bread crumbs, milk, egg, salt, pepper, and ranch seasoning (if using). Mix well.
  2. Press the meatloaf mixture into the bottom of a 7 x 11 inch baking dish.
  3. Peel and cut potatoes, then place in a pot and cover with water. Cook until fork tender.
  4. Drain potatoes and add butter, milk, salt, pepper, ranch seasoning (if using), and half of the shredded cheese. Mash until smooth.
  5. Spread mashed potatoes evenly over the meatloaf layer in the baking dish.
  6. Sprinkle the remaining cheese and crumbled bacon on top of the mashed potatoes.
  7. Bake in a preheated 375°F oven for 30 minutes covered, then 15 minutes uncovered until cheese is melted and bacon is crispy.

Notes

For best results, use freshly cooked mashed potatoes rather than instant. You can add dry ranch seasoning to both meatloaf and mashed potatoes for extra flavor. Let the casserole rest a few minutes after baking before serving to set.
