Loaded Potato Meatloaf Casserole

A hearty casserole combining seasoned ground beef meatloaf base topped with creamy mashed potatoes, melted cheddar cheese, and crispy bacon for a comforting and flavorful meal.

  • 1 1/2 pounds ground beef
  • 1/4 cup chopped onion
  • 2/3 cup plain bread crumbs
  • 1/3 cup milk
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon dry ranch seasoning (optional)
  • 2 pounds potatoes, peeled and cut
  • 1/3 cup butter
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon dry ranch seasoning (optional)
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese

Instructions

  1. In a bowl, combine ground beef, chopped onion, bread crumbs, milk, egg, salt, pepper, and ranch seasoning (if using). Mix well.
  2. Press the meatloaf mixture evenly into the bottom of a 7 x 11 inch baking dish.
  3. Boil peeled and cut potatoes in water until fork tender, then drain.
  4. Mash the potatoes with butter, milk, salt, pepper, ranch seasoning (if using), and half of the shredded cheddar cheese until smooth.
  5. Spread the mashed potatoes evenly over the meatloaf layer in the baking dish.
  6. Sprinkle the remaining cheddar cheese and crumbled bacon on top.
  7. Bake in a preheated 375°F oven covered for 30 minutes, then uncovered for an additional 15 minutes until cheese is melted and bubbly.

Notes

For extra flavor, ranch seasoning is optional but recommended. Using a baking dish with a lid helps retain moisture during baking. This casserole reheats well and makes great leftovers.
