For the Crust:
- 2 cups grated zucchini
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 tablespoon lemon zest
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together eggs, oil, and lemon zest. Stir in grated zucchini.
- Combine wet and dry ingredients until just blended. Pour batter into prepared loaf pan.
- Bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool before slicing.
