Lemon Zucchini Heaven Bread

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup grated zucchini
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix grated zucchini, sugar, oil, egg, lemon zest, lemon juice, and vanilla extract.
  4. Combine wet ingredients with dry ingredients and stir until just mixed.
  5. Pour batter into the prepared loaf pan and bake for 50-55 minutes or until a toothpick comes out clean.
  6. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
