For the Crust:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup vegetable oil
- 1 1/3 cups sugar
- 2 large eggs
- 1/2 cup milk
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1 cup grated zucchini
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a large bowl, whisk together flour, salt, and baking powder.
- In another bowl, mix oil, sugar, eggs, milk, lemon zest, and lemon juice until well combined.
- Stir the wet ingredients into the dry ingredients until just combined. Fold in grated zucchini.
- Pour batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
