Classic Lemon Pie

A tangy and sweet lemon pie with a buttery crust.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled
  • 1/4 cup ice water
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/4 tsp salt
  • 1 cup heavy cream (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Mix flour and butter until crumbly, then add ice water to form a dough. Press into a pie dish and bake for 15 minutes.
  3. Whisk together sugar, eggs, lemon juice, lemon zest, and salt. Pour into the pre-baked crust.
  4. Bake for 20 minutes or until the filling is set. Let cool completely.
  5. Top with whipped heavy cream before serving.
