Lemon Loaf Cake

A moist and tangy lemon loaf cake with a sweet glaze, perfect for tea time or dessert.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in lemon zest, lemon juice, and vanilla.
  4. Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture.
  5. Pour batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
