Lemon Custard Cake

For the Crust:

  • 4 large eggs, separated
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup all-purpose flour
  • 1 1/2 cups milk
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/4 tsp salt
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (160°C). Grease an 8-inch square baking dish.
  2. In a large bowl, beat egg yolks and sugar until light and fluffy. Stir in melted butter, flour, milk, lemon juice, and lemon zest.
  3. In a separate bowl, beat egg whites and salt until stiff peaks form. Gently fold into the lemon mixture.
  4. Pour batter into the prepared dish. Bake for 40-45 minutes or until the top is golden and the center is set.
  5. Let cool completely, then dust with powdered sugar before serving.
