Lemon Custard Cake

For the Crust:

  • 4 eggs, separated
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup all-purpose flour
  • 1 1/2 cups milk
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Grease an 8-inch square baking dish.
  2. In a large bowl, beat egg yolks and sugar until light and fluffy. Add butter and mix well.
  3. Stir in flour, milk, lemon juice, lemon zest, and vanilla extract until smooth.
  4. In a separate bowl, beat egg whites and salt until stiff peaks form. Gently fold into the lemon mixture.
  5. Pour batter into prepared baking dish. Place dish in a larger pan filled with hot water (about 1 inch deep).
  6. Bake for 45-50 minutes or until top is golden and center is set. Let cool before serving.
