For the Crust:
1 1/2 cups all-purpose flour
1/2 cup powdered sugar
3/4 cup unsalted butter, cold and cubed
4 large eggs
1 1/2 cups granulated sugar
1/2 cup fresh lemon juice
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon lemon zest
1/2 cup granulated sugar (for topping)
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
In a bowl, mix 1 1/2 cups flour and powdered sugar. Cut in butter until crumbly. Press into the prepared pan and bake for 15 minutes.
In another bowl, whisk eggs, 1 1/2 cups sugar, lemon juice, 1/4 cup flour, baking powder, salt, and lemon zest until smooth. Pour over the baked crust.
Bake for 20-25 minutes until set. Let cool completely.
Sprinkle remaining 1/2 cup sugar evenly over the top. Use a kitchen torch to caramelize the sugar until golden and crisp. Let cool before slicing.
