Lemon Coconut Heaven Cookies

Delightfully tangy and sweet cookies with a tropical coconut twist.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, cream butter and sugar until light and fluffy. Beat in egg, lemon zest, and lemon juice.
  4. Gradually mix in the dry ingredients until combined, then fold in shredded coconut.
  5. Drop tablespoon-sized portions of dough onto the baking sheet, spacing them 2 inches apart.
  6. Bake for 12-15 minutes or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
