For the Crust:
- 1 cup all-purpose flour
- 1/2 cup shredded coconut
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 tsp lemon zest
- 2 tbsp lemon juice
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, shredded coconut, granulated sugar, butter, egg, lemon zest, and lemon juice until a dough forms.
- In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Take small portions of dough, flatten them, add a teaspoon of cream cheese filling, and fold the dough over to seal.
- Place cookies on the baking sheet and bake for 12-15 minutes or until edges are lightly golden.
- Let cool before serving.
