Lemon Coconut Cheesecake Cookies

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/2 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, salt, and shredded coconut.
  3. In another bowl, beat cream cheese, butter, and sugar until light and fluffy.
  4. Add egg, lemon zest, lemon juice, and vanilla extract to the butter mixture, mixing well.
  5. Gradually fold in the dry ingredients until just combined.
  6. Drop tablespoon-sized portions of dough onto the baking sheet, spacing them 2 inches apart.
  7. Bake for 12-15 minutes or until edges are lightly golden.
  8. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
