Lazy Girl Pecan Pie Bars

Everything you love about pecan pie, but in easy bar form! These Lazy Girl Pecan Pie Bars feature a buttery shortbread-style crust topped with a rich, gooey pecan filling packed with chopped pecans in every bite.

  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 sticks (1 cup) butter, cold
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 1/2 cups light corn syrup
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, firmly packed
  • 3 tablespoons butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups pecans, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl or stand mixer, combine the flour, 1/2 cup granulated sugar, 1/2 teaspoon salt, and 2 sticks cold butter. Mix until the mixture is crumbly.
  3. Grease a large pan (preferably 10×15-inch) or line with parchment paper. Press the crust mixture firmly into the bottom of the pan to form an even layer.
  4. Bake the crust for 10 minutes, until lightly golden.
  5. While the crust bakes, in a separate bowl or stand mixer, whisk together the eggs, light corn syrup, 3/4 cup granulated sugar, brown sugar, melted butter, vanilla extract, and chopped pecans until well combined.
  6. Remove the crust from the oven and immediately pour the pecan filling over the hot crust. Use a spatula to spread evenly.
  7. Return the pan to the oven and bake for 35 minutes, until the filling is set and the edges are golden brown.
  8. Let the bars cool completely in the pan before cutting into squares and serving.

Notes

For best results, use cold butter for the crust and press it firmly into the pan. Let the bars cool completely before cutting to ensure clean slices. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
