Ingredients

Scale
  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 sticks butter
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 1/2 cups light corn syrup
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, firmly packed
  • 3 tablespoons butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups pecans, in pieces

Instructions

  1. Preheat oven to 350 degrees. In a large bowl or standing mixer combine the flour, 1/2 cup sugar, 1/2 tsp salt, and 2 sticks of butter. Mix well until the mixture is dry and crumbly.
  2. In a large pan (preferably 10×15), grease the bottom or line with parchment paper. Pour the crust mixture onto the greased pan and press firmly to create a crust. Bake in the oven for 10 minutes at 350 degrees.
  3. In a separate bowl or standing mixer, combine eggs, corn syrup, sugar, brown sugar, melted butter, vanilla extract, and chopped pecans; mix well. Set aside until the crust is done baking.
  4. After 10 minutes, remove the crust from the oven.
  5. Pour the prepared pecan filling mixture on top of the hot crust. Use a spatula or spoon to distribute evenly.
  6. Place back in the oven. Bake for 35 minutes at 350 degrees.
  7. Let cool and serve.

Notes

Use parchment paper to line the pan for easy removal. Pour the filling onto the hot crust for best results. Total baking time is 45 minutes (10 minutes for crust plus 35 minutes for filling).
