Lazy Girl Pecan Pie Bars

Easy and delicious pecan pie bars with a buttery shortbread crust and a gooey pecan filling, perfect for holidays or any occasion.

  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 sticks butter
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 1/2 cups light corn syrup
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, firmly packed
  • 3 tablespoons butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups pecans, in pieces

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl or standing mixer, combine the flour, 1/2 cup sugar, 1/2 tsp salt, and 2 sticks of butter. Mix well until the mixture is dry and crumbly.
  3. Grease the bottom of a large pan (preferably 10×15) or line with parchment paper. Pour the crust mixture onto the pan and press firmly to create a crust.
  4. Bake the crust for 10 minutes at 350 degrees.
  5. In a separate bowl, combine eggs, corn syrup, 3/4 cup granulated sugar, 3/4 cup brown sugar, 3 tablespoons melted butter, vanilla extract, and chopped pecans. Mix well.
  6. After 10 minutes, remove the crust from the oven and pour the prepared pecan filling mixture on top. Use a spatula or spoon to distribute evenly.
  7. Place back in the oven and bake for 35 minutes at 350 degrees.
  8. Let cool and serve.

Notes

For best results, use a 10×15 pan for a thinner bar or a 9×13 for a thicker bar. Allow bars to cool completely before slicing for clean cuts. Store in an airtight container at room temperature.
