For the Crust:
- 4 boneless, skinless chicken breasts
- 2 ripe peaches, sliced
- 2 jalapeños, sliced (seeds removed for less heat)
- 2 tbsp olive oil
- 1/4 cup honey
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- In a bowl, whisk together honey, soy sauce, lime juice, garlic powder, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-6 minutes per side until golden brown.
- Reduce heat to medium. Add sliced peaches and jalapeños to the skillet, then pour the honey-soy mixture over the chicken.
- Simmer for 8-10 minutes, basting the chicken occasionally, until the sauce thickens and the chicken is cooked through.
- Garnish with fresh cilantro before serving.
