Jalapeño Peach Chicken

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 ripe peaches, sliced
  • 2 jalapeños, sliced (seeds removed for less heat)
  • 2 tbsp olive oil
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together honey, soy sauce, lime juice, garlic powder, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-6 minutes per side until golden brown.
  3. Reduce heat to medium. Add sliced peaches and jalapeños to the skillet, then pour the honey-soy mixture over the chicken.
  4. Simmer for 8-10 minutes, basting the chicken occasionally, until the sauce thickens and the chicken is cooked through.
  5. Garnish with fresh cilantro before serving.
