For the Crust:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1/4 cup honey
- 1/4 cup melted butter
- 1 egg
- 2 jalapeños, diced
- 4 oz cream cheese, softened
- 1/4 cup shredded cheddar cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- In a bowl, mix cornmeal, flour, baking powder, and salt.
- In another bowl, whisk buttermilk, honey, melted butter, and egg. Combine wet and dry ingredients, then fold in diced jalapeños.
- In a small bowl, mix cream cheese and cheddar cheese until smooth.
- Fill each muffin cup halfway with cornbread batter. Add a spoonful of cream cheese mixture, then top with more batter.
- Bake for 18-20 minutes or until golden. Let cool slightly before serving.
