Irresistible Zucchini Banana Bread

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 ripe bananas, mashed
  • 1 cup grated zucchini
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix mashed bananas, grated zucchini, brown sugar, oil, egg, and vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  6. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
