Irresistible Strawberry Cheesecake Cookie Cups

Delicious cookie cups filled with creamy cheesecake and topped with fresh strawberries.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup fresh strawberries, diced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a muffin tin.
  2. In a bowl, mix flour, butter, granulated sugar, egg yolk, and vanilla to form a cookie dough.
  3. Press dough into muffin tin cups to form small cookie cups. Bake for 12-15 minutes until golden.
  4. While cookie cups cool, beat cream cheese and powdered sugar until smooth.
  5. Fill each cookie cup with the cream cheese mixture and top with diced strawberries.
  6. Chill for at least 30 minutes before serving.
