For the Crust:
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup diced peaches (fresh or canned, drained)
- 1/2 cup rolled oats
- 1/4 cup chopped pecans
- 2 tbsp cinnamon sugar mixture (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt. Set aside.
- In a separate bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- Gradually mix in the dry ingredients until just incorporated.
- Fold in diced peaches, oats, and pecans.
- Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Sprinkle each cookie with the cinnamon sugar mixture.
- Bake for 12-15 minutes or until edges are golden brown.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
