Irresistible Peach Cobbler Cookies

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup diced peaches (fresh or canned, drained)
  • 1/2 cup rolled oats
  • 1/4 cup chopped pecans
  • 2 tbsp cinnamon sugar mixture (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a separate bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in egg and vanilla extract until well combined.
  5. Gradually mix in the dry ingredients until just incorporated.
  6. Fold in diced peaches, oats, and pecans.
  7. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Sprinkle each cookie with the cinnamon sugar mixture.
  9. Bake for 12-15 minutes or until edges are golden brown.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
