Irresistible Lemon Blueberry Cheesecake

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tbsp lemon zest
  • 1/4 cup lemon juice
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup blueberry jam (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan.
  3. Beat cream cheese and sugar until smooth. Add sour cream, eggs, lemon zest, lemon juice, and vanilla. Mix well.
  4. Gently fold in blueberries. Pour mixture over the crust.
  5. Bake for 50-60 minutes until the center is set. Let cool, then refrigerate for at least 4 hours.
  6. Before serving, warm blueberry jam and drizzle over the cheesecake.
