Irresistible Cinnamon Cream Cheese Cookies

For the Crust:

  • 1 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/4 cup cinnamon sugar for rolling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, cream cheese, granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla.
  3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to wet ingredients, mixing until just combined.
  4. Scoop dough into 1-inch balls, roll in cinnamon sugar, and place 2 inches apart on baking sheets. Flatten slightly with the bottom of a glass.
  5. Bake for 10-12 minutes until edges are lightly golden. Let cool on baking sheet for 5 minutes before transferring to a wire rack.
