Irresistible Blueberry Almond Snowball Cookies

For the Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for rolling
  • 1 teaspoon almond extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup finely chopped almonds
  • 1/2 cup dried blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and 1/2 cup powdered sugar until light and fluffy. Mix in almond extract.
  3. Gradually blend in flour and salt until just combined. Fold in chopped almonds and dried blueberries.
  4. Shape dough into 1-inch balls and place 1 inch apart on prepared baking sheets. Bake for 12-15 minutes until set but not browned.
  5. Let cookies cool for 5 minutes, then roll in additional powdered sugar while still warm. Cool completely on wire racks before serving.
