Irresistible Biscoff Cake for All Occasions

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup Biscoff spread
  • 3 large eggs
  • 1 cup milk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 12 Biscoff cookies, crushed

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
  2. In a large bowl, cream together butter, Biscoff spread, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, alternating with milk.
  5. Fold in half of the crushed Biscoff cookies. Pour batter into the prepared pan.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Let cool completely.
  7. Frost with additional Biscoff spread and top with remaining crushed cookies.
