Hummingbird Banana Bread

A tropical twist on classic banana bread with pineapple, bananas, and warm spices.

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3 ripe bananas, mashed
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, mix mashed bananas, pineapple, sugars, eggs, oil, and vanilla until well combined.
  4. Gradually stir dry ingredients into wet ingredients until just combined. Fold in pecans.
  5. Pour batter into prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  6. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
