Hummingbird Banana Bread

A tropical twist on classic banana bread with pineapple, coconut, and pecans.

For the Crust:

  • 3 ripe bananas, mashed
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup shredded coconut
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mix mashed bananas, pineapple, sugars, oil, eggs, and vanilla until well combined.
  3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to wet ingredients, mixing just until combined.
  5. Fold in coconut and pecans.
  6. Pour batter into prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  7. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
