For the Crust:
- 3 ripe bananas, mashed
- 1/2 cup crushed pineapple, drained
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup shredded coconut
- 1/2 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, mix mashed bananas, pineapple, sugars, oil, eggs, and vanilla until well combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to wet ingredients, mixing just until combined.
- Fold in coconut and pecans.
- Pour batter into prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
