Honey Pineapple Chicken

A sweet and tangy chicken dish with honey-glazed pineapple for a tropical twist.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons chopped green onions (for garnish)

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together honey, soy sauce, olive oil, garlic, and ginger to make the marinade.
  2. Season chicken breasts with salt and pepper, then coat them in the marinade. Let sit for at least 10 minutes.
  3. Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 5-6 minutes per side until golden and cooked through.
  4. Add pineapple chunks to the skillet and cook for another 2-3 minutes until heated through and slightly caramelized.
  5. Garnish with chopped green onions before serving.
