For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 3 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- 2 tablespoons chopped green onions (for garnish)
Instructions
1. Prepare the Crust:
- In a bowl, whisk together honey, soy sauce, olive oil, garlic, and ginger to make the marinade.
- Season chicken breasts with salt and pepper, then coat them in the marinade. Let sit for at least 10 minutes.
- Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 5-6 minutes per side until golden and cooked through.
- Add pineapple chunks to the skillet and cook for another 2-3 minutes until heated through and slightly caramelized.
- Garnish with chopped green onions before serving.
