Honey Pecan Cheesecake Muffins

Deliciously moist muffins with a creamy cheesecake center and a crunchy pecan topping, sweetened with honey.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/3 cup honey
  • 1 large egg
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup honey
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix melted butter, honey, egg, buttermilk, and vanilla. Gradually add dry ingredients and stir until just combined.
  4. In a separate bowl, beat cream cheese and honey until smooth.
  5. Fill muffin cups halfway with batter, add a spoonful of cream cheese mixture, then top with remaining batter. Sprinkle pecans on top.
  6. Bake for 20-25 minutes or until a toothpick comes out clean. Let cool before serving.
