For the Crust:
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1/4 cup honey
1/2 cup milk
1 tsp vanilla extract
1 cup diced peaches (fresh or canned)
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a bowl, whisk together flour, baking powder, and salt. Set aside.
In a separate bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, then mix in honey, milk, and vanilla extract.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in diced peaches.
Divide batter evenly among cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
