For the Crust:
- 1 lb boneless, skinless chicken breasts
- 1/4 cup honey
- 3 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked white rice
- 1 avocado, diced
- 1/4 cup chopped cilantro
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- In a bowl, whisk together honey, lime juice, garlic, chili powder, salt, and pepper. Reserve 2 tbsp of the marinade for later.
- Add chicken to the remaining marinade and let sit for at least 15 minutes.
- Heat olive oil in a skillet over medium heat. Cook chicken for 5-6 minutes per side until fully cooked. Let rest, then slice.
- In a bowl, gently mix cooked rice, diced avocado, and cilantro with the reserved marinade.
- To assemble, layer rice mixture and sliced chicken in stacks. Serve immediately.
