Honey Lime Chicken & Avocado Rice Stack

A flavorful and colorful dish featuring marinated chicken, creamy avocado, and fluffy rice layered into a delicious stack.

For the Crust:

  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup honey
  • 3 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked white rice
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together honey, lime juice, garlic, chili powder, salt, and pepper. Reserve 2 tbsp of the marinade for later.
  2. Add chicken to the remaining marinade and let sit for at least 15 minutes.
  3. Heat olive oil in a skillet over medium heat. Cook chicken for 5-6 minutes per side until fully cooked. Let rest, then slice.
  4. In a bowl, gently mix cooked rice, diced avocado, and cilantro with the reserved marinade.
  5. To assemble, layer rice mixture and sliced chicken in stacks. Serve immediately.
