For the Crust:
- 2 cups grated carrots
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup honey
- 1/2 cup brown sugar
- 3/4 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp cinnamon
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a bowl, whisk together flour, baking soda, salt, and cinnamon.
- In another bowl, mix honey, brown sugar, oil, eggs, and vanilla. Stir in grated carrots.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool completely.
- For the frosting, beat cream cheese and butter until smooth. Add powdered sugar, cinnamon, and vanilla, mixing until creamy.
- Spread frosting over cooled cake and serve.
