Homemade Reuben Bake

A hearty and delicious casserole that combines all the classic flavors of a Reuben sandwich in an easy-to-make bake, perfect for family dinners or potlucks.

  • 8 slices rye bread, crusts removed and cubed
  • 1 pound corned beef, chopped
  • 2 cups shredded Swiss cheese
  • 1 cup sauerkraut, drained
  • 1/2 cup Thousand Island dressing
  • 3 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter, melted

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs, milk, salt, and pepper.
  3. Add cubed bread, chopped corned beef, shredded Swiss cheese, sauerkraut, and Thousand Island dressing to the egg mixture. Stir gently to combine.
  4. Pour the mixture into a greased 9×13-inch baking dish.
  5. Drizzle melted butter over the top.
  6. Bake uncovered for 45-50 minutes or until the top is golden brown and the casserole is set.
  7. Let cool for 5 minutes before serving.

Notes

For best results, use day-old bread to prevent sogginess. You can prepare the bake the night before and refrigerate it, then bake in the morning for a convenient meal.
