Homemade Lemon Blueberry Bars

A tangy and sweet dessert with a buttery crust, zesty lemon filling, and juicy blueberries.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. In a bowl, mix 1 1/2 cups flour, 1/2 cup sugar, and salt. Cut in butter until crumbly. Press into the prepared pan and bake for 15 minutes.
  3. In another bowl, whisk eggs, 1 cup sugar, lemon juice, and zest. Stir in 1/4 cup flour and baking powder until smooth. Fold in blueberries.
  4. Pour filling over the baked crust. Bake for 25-30 minutes or until set. Cool completely before cutting into bars.
