For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 cup fresh blueberries
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
- In a bowl, mix 1 1/2 cups flour, 1/2 cup sugar, and salt. Cut in butter until crumbly. Press into the prepared pan and bake for 15 minutes.
- In another bowl, whisk eggs, 1 cup sugar, lemon juice, and zest. Stir in 1/4 cup flour and baking powder until smooth. Fold in blueberries.
- Pour filling over the baked crust. Bake for 25-30 minutes or until set. Cool completely before cutting into bars.
