Homemade Cranberry Orange Cookies

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon orange zest
  • 1/2 cup dried cranberries
  • 1/4 cup fresh orange juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg, orange zest, and orange juice.
  4. Gradually mix in the dry ingredients until just combined. Fold in the dried cranberries.
  5. Drop tablespoon-sized dough onto prepared baking sheets, spacing them 2 inches apart.
  6. Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to a wire rack.
