Simple Kale and Brussels Sprout Salad
- 1 lb Brussels sprouts – sliced thin
- 2 cups lacinato kale – thinly sliced
- 1 cup sliced red onion
- 1/2 cup shelled pistachios
- 1/3 cup dried cranberries or pomegranate seeds
- 1/4 cup grated parmesan cheese
- 2 tablespoons dijon mustard
- Zest and juice of 1 lemon – about 2 teaspoons of lemon zest and 1 tablespoon lemon juice
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1/2 cup olive oil
- Add the thinly sliced Brussel sprouts, kale, onion, pistachios, and dried cranberries to a large mixing bowl or salad bowl.
- Add the dijon mustard, lemon juice and zest, maple syrup, salt, and pepper to a medium-sized mixing bowl and whisk to combine while adding in a slow stream of olive oil to add some creaminess to the dressing. Season with more salt and pepper if needed.
- Pour the dressing onto the salad and toss to combine. Then top with the grated parmesan cheese.
