Heavenly White Chocolate Pineapple Cake

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup crushed pineapple, drained
  • 1/2 cup white chocolate chips, melted
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream butter and sugar until light. Add eggs one at a time, then mix in vanilla and melted white chocolate.
  4. Alternately add flour mixture and buttermilk to the batter, beginning and ending with flour. Fold in crushed pineapple.
  5. Pour batter into prepared pan. Bake for 30-35 minutes or until a toothpick comes out clean. Cool completely before frosting.
