For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups fresh strawberries, diced
- 1 cup whipped cream
- 1 tbsp powdered sugar (for garnish)
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line an 8×8 inch baking pan with parchment paper.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the prepared pan to form the crust.
- Bake crust for 10 minutes, then remove and let cool slightly.
- In a large bowl, beat cream cheese, sour cream, and 3/4 cup sugar until smooth. Add eggs one at a time, then mix in vanilla.
- Pour cheesecake batter over the crust. Top evenly with diced strawberries.
- Bake for 30-35 minutes until edges are set but center still jiggles slightly.
- Cool completely at room temperature, then refrigerate for at least 4 hours.
- Cut into bars, top with whipped cream, and dust with powdered sugar before serving.
