Heavenly Strawberry Shortcake Cheesecake Bars

A delightful fusion of strawberry shortcake and creamy cheesecake in a convenient bar form.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, diced
  • 1 cup whipped cream
  • 1 tbsp powdered sugar (for garnish)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line an 8×8 inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the prepared pan to form the crust.
  3. Bake crust for 10 minutes, then remove and let cool slightly.
  4. In a large bowl, beat cream cheese, sour cream, and 3/4 cup sugar until smooth. Add eggs one at a time, then mix in vanilla.
  5. Pour cheesecake batter over the crust. Top evenly with diced strawberries.
  6. Bake for 30-35 minutes until edges are set but center still jiggles slightly.
  7. Cool completely at room temperature, then refrigerate for at least 4 hours.
  8. Cut into bars, top with whipped cream, and dust with powdered sugar before serving.
