Heavenly Raspberry Cheesecake Bars

Delicious and creamy raspberry cheesecake bars with a buttery graham cracker crust.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • 1 cup fresh raspberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then mix in vanilla.
  4. Pour cream cheese mixture over the crust. Drop spoonfuls of raspberry jam on top and swirl with a knife.
  5. Bake for 30 minutes or until the center is set. Let cool completely, then refrigerate for at least 2 hours.
  6. Top with fresh raspberries before serving. Cut into bars and enjoy.
