For the Crust:
- 1 1/2 cups shelled pistachios
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup cherry pie filling
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a food processor, pulse pistachios and 1/4 cup sugar until finely ground. Add melted butter and pulse until combined.
- Press pistachio mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then let cool slightly.
- In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla, mixing well after each addition.
- Pour filling over the crust. Bake for 20-25 minutes until set. Let cool completely.
- Spread cherry pie filling over the cooled cheesecake. Chill for at least 2 hours before slicing into bars.
