Cheesy Ground Beef and Rice Casserole

A hearty and creamy casserole combining ground beef, rice, mushrooms, and cheese baked to perfection for a comforting family meal.

  • 1 lb ground beef
  • Salt, to taste
  • Pepper, to taste
  • Italian seasoning, to taste
  • 2 tbsp butter
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 3/4 cup butter
  • 1 1/2 cups uncooked rice
  • 1 cup sliced mushrooms
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 2 cups shredded cheese, divided (cheddar or your choice)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Brown the ground beef in a large pot over medium-high heat. Season with salt, pepper, and Italian seasoning. Drain grease and set beef aside covered.
  3. Melt 2 tbsp butter in the same pot. Add diced onions and cook for 5 minutes until softened. Add garlic and cook 1 more minute.
  4. Add beef broth, butter, and rice. Stir to combine. Bring to a boil, reduce to a simmer, cover tightly and cook for 10 minutes.
  5. Add mushrooms, replace cover, and cook for 5-10 more minutes without stirring (follow rice package instructions).
  6. Turn off heat, keep covered and let stand for 10 minutes without stirring.
  7. Add cooked ground beef back to pot along with cream of mushroom soup, milk, sour cream, and half of the cheese. Stir to combine.
  8. Transfer mixture to a lightly greased 9×13 casserole dish. Top with remaining cheese.
  9. Cover and bake for 20 minutes until cheese is melted and bubbly. Serve warm.

Notes

For best results, do not stir the rice while cooking to prevent mushiness. You can substitute cream of mushroom soup with cream of chicken or celery for variation. Letting the casserole rest after cooking helps flavors meld.
