A hearty and nutritious vegetable soup packed with fresh vegetables and herbs, perfect for a healthy family meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 6 cups low-sodium vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 2 cups fresh spinach, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic; sauté until onion is translucent, about 5 minutes.
  3. Add carrots and celery; cook for another 5 minutes, stirring occasionally.
  4. Stir in zucchini, yellow squash, and green beans; cook for 3 minutes.
  5. Add diced tomatoes with their juice, vegetable broth, dried basil, and dried oregano.
  6. Bring the soup to a boil, then reduce heat and simmer uncovered for 25-30 minutes, or until vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Stir in chopped spinach and parsley; cook for an additional 2 minutes until spinach is wilted.
  9. Remove from heat and serve hot.

Notes

For added protein, consider adding cooked beans or lentils. This soup stores well and tastes even better the next day. Use fresh herbs if available for enhanced flavor.
