For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 3 large eggs
- 1 cup vegetable oil
- 2 cups grated carrots
- 1 cup crushed pineapple (drained)
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, sugar, baking soda, cinnamon, nutmeg, and salt.
- Add eggs, oil, grated carrots, pineapple, and vanilla. Mix until well combined.
- Fold in walnuts if using. Pour batter into prepared pan.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let cool completely before frosting if desired.
