Hawaiian Carrot Pineapple Cake

A tropical twist on classic carrot cake with juicy pineapple and warm spices.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup crushed pineapple (drained)
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  3. Add eggs, oil, grated carrots, pineapple, and vanilla. Mix until well combined.
  4. Fold in walnuts if using. Pour batter into prepared pan.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. Let cool completely before frosting if desired.

Notes

You can customize the seasonings to taste.
