Hawaiian Carrot Pineapple Cake

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon

  • 1 cup granulated sugar
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, beat sugar, oil, eggs, and vanilla until smooth. Gradually mix in the dry ingredients.
  4. Fold in grated carrots, crushed pineapple, coconut, and walnuts until well combined.
  5. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  6. Let cool completely before serving or frosting.
