For the Crust:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 3/4 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/2 cup chopped walnuts
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- In a large bowl, beat sugar, oil, eggs, and vanilla until smooth. Gradually mix in the dry ingredients.
- Fold in grated carrots, crushed pineapple, coconut, and walnuts until well combined.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Let cool completely before serving or frosting.
