Hawaiian Carrot Pineapple Cake

A tropical twist on classic carrot cake with the sweetness of pineapple and a hint of coconut.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 large eggs
  • 3/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat eggs, oil, and vanilla. Stir in carrots, pineapple, coconut, and walnuts.
  4. Combine wet and dry ingredients, mixing until just blended. Pour into prepared pan.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool completely before frosting if desired.
