For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3 large eggs
- 3/4 cup vegetable oil
- 1 tsp vanilla extract
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/2 cup chopped walnuts
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, beat eggs, oil, and vanilla. Stir in carrots, pineapple, coconut, and walnuts.
- Combine wet and dry ingredients, mixing until just blended. Pour into prepared pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool completely before frosting if desired.
