Hash Brown Breakfast Casserole

  • 1 (30 oz) package frozen shredded hash browns, thawed
  • 1 pound breakfast sausage, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced onion
  • 8 large eggs
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Spread the thawed hash browns evenly in the bottom of the prepared baking dish.
  3. Sprinkle the cooked sausage, diced onion, and shredded cheddar cheese evenly over the hash browns.
  4. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika until well combined.
  5. Pour the egg mixture evenly over the hash brown mixture in the baking dish.
  6. Bake uncovered for 45-55 minutes, or until the eggs are set and the top is golden brown.
  7. Let the casserole cool for 5-10 minutes before serving.

Notes

For a vegetarian version, substitute sausage with sautéed mushrooms or bell peppers. You can prepare this casserole the night before and bake it in the morning for a convenient breakfast.
