  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 ½ teaspoons vanilla extract
  • 34 tablespoons Halloween sprinkles, divided

Instructions

  1. In a large bowl, whisk together the flour, baking powder, and salt; set aside.
  2. In the bowl of an electric mixer, beat the butter until smooth.
  3. Add the sugar and blend until fully combined and fluffy.
  4. Add the egg and vanilla extract and blend until combined.
  5. Slowly add the flour mixture while mixing until the dough forms and starts pulling away from the sides of the bowl.
  6. Add 2 tablespoons of sprinkles and blend just until incorporated.
  7. Using a cookie scoop, portion dough onto a parchment-lined baking sheet.
  8. Roll each dough ball in the remaining sprinkles to coat the outside.
  9. Bake at 350°F for about 8 minutes or until edges are set but centers are still soft.
  10. Cool on the baking sheet before transferring to a wire rack to cool completely.

Notes

For best results, chill the dough before baking to prevent spreading. Use fresh sprinkles to maintain vibrant colors. Store cookies in an airtight container for up to 3 days to keep them soft.
