Ground Beef Zucchini Sweet Potato Skillet

A hearty and healthy one-pan meal featuring ground beef, zucchini, and sweet potatoes.

For the Crust:

  • 1 lb ground beef
  • 1 medium sweet potato, diced
  • 1 medium zucchini, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Add onion, garlic, and sweet potato. Cook for 5-7 minutes until sweet potato begins to soften.
  4. Stir in zucchini, paprika, cumin, salt, and pepper. Cook for another 5-7 minutes until vegetables are tender.
  5. Garnish with fresh parsley before serving.
